Your EA works a typical 8-hour day, 5 days per week. For most clients, that means 9am - 5pm Eastern Time, Monday through Friday.
If you need to shift the schedule earlier or later to suit your business needs, that's fine, as long as it's within a North American timezone (Pacific to Eastern).
Discuss any schedule adjustments directly with your EA. They'll be accommodating within reasonable bounds.
It's expected that your EA will occasionally work some overtime during busy periods like a product launch, a conference, or end-of-quarter crunch times. This is part of supporting you effectively.
If overtime needs to become a regular ongoing requirement, we'd recommend adding a second EA to provide adequate coverage.
